[Applications of L-Cysteine Hydrochloride Monohydrate] Bread improver; nutritional supplement, antioxidant, color fixative. Used as an additive in food, feed, cosmetics, and pharmaceuticals. As a bread improver, it promotes fermentation and prevents oxidation. In food, it serves as a rapid bread promoter to enhance the flavor of bread and other food products. In cosmetics, it is used in perm solutions, sunscreens, hair growth perfumes, and hair conditioners. As a nutritional supplement, antioxidant, and color fixative, it is added to natural juices to prevent vitamin C oxidation and discoloration.
Appearance: Colorless to white fine columnar crystals or white crystalline powder with a slight special odor and sour taste.
Applications: Flour treatment agent; nutritional supplement; antioxidant; color fixative; quality improvement agent; brewing and food manufacturing agent. Can be used as a bread fermentation promoter and preservative; accelerates gluten formation and prevents aging; added to natural juices to prevent oxidation and browning of vitamin C.
Usage Limits:
1. GB 172.320: Fermented flour products, 0.06 g/kg.
2. FDA, §172.320 (2000): As a nutritional supplement, it should account for 2.3% (by mass) of the total protein content in food.
3. FDA, §184.1272 (2000): 0.09% of the flour weight.
4. FEMA stipulates a limit of 100 mg/kg in beverages, baked goods, meat products, dairy products, condiments, and cereals.
5. Typical usage in bread is 20–45 mg/kg. In natural juices, usage can reach 200–800 mg/kg.
